Portalegre's Miniaturas de Amêndoa are small sweets modelled by hand from a silky almond-and-sugar paste filled with ovos moles. The assortment represents foods in miniature—especially cheeses, hams and chestnuts—using incisions, relief and lightly toasted tones to suggest each form.

The paste is prepared by adding almond flour to sugar syrup at a light paste stage. Once cool, it encloses the yolk filling and is worked like a sculptural material, balancing confectionery with craft.

History

Portalegre City Council attributes the almond miniatures to the Poor Clares of the Convent of Santa Clara. The recipe transmitted by confectioner Judite Cardoso describes a sugar-and-almond paste used to shape little cheeses and other forms filled with ovos moles.

The Polytechnic Institute of Portalegre identifies the traditional cheese, ham and chestnut shapes, while the municipal confectionery fair continues to offer workshops in the craft. The name appears in QUALIFICA's national inventory of traditional products.
