Maravilha do Lima is a rectangular cake of fine layers built on light pão-de-ló sponge. Between the sheets are condensed-milk cream, apple jelly scented with honey and cider, and a band of crunchy walnut. Its white rice-pudding top is finished with powdered cinnamon stencilled into the silhouette of Ponte de Lima’s bridge.

Each slice brings together sharply different textures: soft sponge, smooth cream, fresh gelled apple, crisp walnut and the tender grains of rice pudding. The low elongated form and brown arches drawn across the white surface make the sweet immediately recognisable.

History

During the fourth 100% Agrolimiano fair in February 2019, Ponte de Lima municipality held a competition to create an innovative sweet based on local products. Among eleven proposals, Maravilha do Lima won: it was entered by O Farinheiro bakery and developed by pastry chef Bruno Alves.

The proposal was also intended to represent the municipality in the Seven Wonders of Portuguese Sweets and reached the district’s final group of twenty-one. Bruno Alves later produced the cake at Doce Encontro. Records from 2021 confirm it at local gastronomic tables, while recent communication from the bakery advertises periodic production, keeping alive a contemporary creation that turns the bridge and the flavours of the Lima valley into dessert.
