Portalegre Leite Serafim is a convent sweet of milk and egg yolks thickened with rice flour and corn starch. It is presented as a broad, shallow disc with a golden-yellow interior, its surface sprinkled with sugar and scorched into irregular dark caramelised patches.

Although related to leite-creme, its consistency is firm enough to cut with a knife and serve in slices. Milky sweetness and rich yolks are balanced by the bitter, smoky edge of burnt sugar.

Variations

Some published home recipes serve it in a bowl like leite-creme, use wheat flour and add cinnamon. Rosária Maroco's documented Portalegre presentation is firmer, broad and shallow, with an intensely scorched surface.

History

Portalegre City Council attributes Leite Serafim to the Poor Clares of the Convent of Santa Clara and includes it among recipes preserved in the city through the Cardoso family and the confectioners taught by Judite Cardoso.

Food researcher Fátima Moura documented Rosária Maroco's version, recording its ingredients—sugar, rice flour, corn starch, yolks and milk—and the fact that it is cut with a knife. RTP devoted a 2018 episode of its Confeitaria Portuguesa series to the sweet, and the complete name appears in QUALIFICA's national inventory.
