Portalegre's almond lamprey is a large sculptural confection of almond paste, sugar and eggs, modelled as a lamprey and coiled into a spiral. Its head, circular mouth and body relief turn the sweet into a table centrepiece traditionally presented at Christmas.

Inside, the filling combines egg sweet with chocolate, creating golden and dark layers beneath the pale almond covering. It differs from Portuguese lampreys built mainly from egg threads: here almond paste defines the body.

History

Portalegre tradition associates the lamprey with the confectionery of the Convent of Santa Clara. The Polytechnic Institute of Portalegre guide describes it as a fish-shaped cake made with almonds, eggs and sugar.

A regional description of the old-style Portalegre almond lamprey records its spiral-coiled body, egg-sweet and chocolate filling and Christmas service. The Santa Clara convent name appears in QUALIFICA's national inventory.
