Guizo de Estremoz is a small individual round cake baked in a low, pale pastry base. Its compact filling combines eggs, almonds and gila squash; in the oven the surface develops a glossy, deeply toasted brown cap with a slightly lighter centre.
Inside it is moist and dense, closer to a convent-style almond cake than a custard tart. Fine gila strands run through the egg-and-nut mixture while the base provides unobtrusive support. Its small scale, low profile and caramelised top visually distinguish it from Gadanha, another speciality of the same bakery.

Public descriptions identify eggs, almonds and gila, but the proportions belong to the maker. It should not be confused with Estremoz Gadanha, which also uses egg and almond but has a different finish and identity.

Guizo is a house speciality of Pastelaria Formosa in central Estremoz. In 2019 the municipal council announced that the bakery represented the city in Portugal's Seven Wonders of Sweets with four products: Gadanha and Guizo as Pastry Cakes, old-style Honey and Walnut Cake in Fruit-and-Honey Sweets, and Pão de Rala as a spoonable or sliced sweet.
All four entered Évora district's 21-product selection; Guizo did not reach the final public shortlist of seven. The consulted sources document its maker, composition and presentation, but do not establish a creation date or specific convent origin, so those stories should not be invented.
