Fofas da Povoação are elongated scalded-dough pastries, related to the éclair but with a form of their own. The dough is piped as two parallel lines with a narrower third ridge along the centre, producing a broad body and raised top. Milk, water, fat, flour and many eggs make it swell in the oven until golden, light and almost hollow; some traditional formulas scent it with fennel seeds.

Once cool, the fofa is split and filled generously with vanilla or lemon cream. The reference finish is not a smooth chocolate dip: a line or braid of dark chocolate buttercream runs along the top, leaving much of the pastry visible.

Taste & texture

Light pastry, sometimes gently anise-scented when fennel is used, with cool vanilla or lemon cream and a richer chocolate note on top.

Variations

Fillings alternate between vanilla and lemon; some recipes use butter, others lard or margarine. The top stripe may be chocolate buttercream or worked chocolate, but it does not completely hide the piped form.

History

Povoação oral tradition attributes the creation to Dona Angelina, who made the pastries for sale in her family's café, but the sources assembled here provide no primary record confirming either authorship or a creation date. The Portuguese Baking School says the specialty dates to at least the 1930s and publishes an adaptation of the formula Maria de Deus taught at Café Restaurante Jardim. The municipality includes the 'famous fôfas' among the area's signature foods. Although technically related to Fofas do Faial, Povoação's elongated form, generous cream and chocolate stripe make it a distinct specialty.
