Compota de Maçã Bravo de Esmolfe is a regional preserve made with the Portuguese DOP variety originating in the village of Esmolfe, Penalva do Castelo. The small-to-medium apple has pale skin sometimes marked red, soft white flesh, an intense aroma and notable sweetness.

For the preserve, its flesh cooks with sugar, lemon and usually cinnamon until golden and thick, while retaining small pieces. To use the DOP name accurately, the fruit should be certified; preserve made with another apple is simply apple preserve.

Variations

It may be smooth or retain small cubes. Some versions reduce sugar to foreground the fruit or add Dão wine, walnuts or another spice.

History

Portugal's DGADR identifies Bravo de Esmolfe as a native variety known since the eighteenth century, born from a seedling apple tree in Esmolfe and later spread by grafting through Beira Alta and part of Cova da Beira. DOP protection recognises a defined production area and distinctive characteristics.

Sweet processing accompanies modern promotion of the variety. A Bravo de Esmolfe preserve won recognition in the municipality's 2018 Delícia de Maçã Bravo de Esmolfe competition, while commercial cinnamon versions maintain an explicit connection to origin.
