Cavacas do Marco are light pale cakes sold in two sizes, large and small. The dough recorded by DGADR uses eggs, flour, bicarbonate of soda and baking powder, which give it volume and a dry airy structure.

Their surface is marked by curved ridges and a fine white finish that emphasises the relief. They are sold by weight throughout the year in Marco de Canaveses.

History

DGADR’s record places the origin in Vila Boa de Quires, reports testimony from the early 19th century and notes wider recognition among Marco residents from the mid-20th century. These dates belong to the history collected by DGADR; this review did not locate a 19th-century primary source.

The contemporary identity is independently corroborated: the Baixo Tâmega agri-food plan lists Cavacas do Marco among Marco de Canaveses’s distinctive sweets and associates them with festivals and pilgrimages, while Portugal’s 2021 Industrial Property Bulletin records the designation ‘Cavacas do Marco — Regional Confectionery of Marco de Canaveses’. The bulletin proves commercial use of the name, not geographical protection or authorship of the recipe.
