Cavacas da Covilhã are a documented local identity, but they must not be described by borrowing from the cavacas of Resende, Caldas da Rainha, Pinhel, Viseu or other places. The open sources reviewed do not publish the dimensions, shape, texture, ingredients or method of the version entered by Padaria Dias.

The image on this page is an editorial representation of the Portuguese cavaca family—baked cakes with a white sugar coating—not a documentary photograph of Padaria Dias's product. This distinction preserves the proven existence of the speciality without turning characteristics from neighbouring variants into Covilhã facts.

Taste & texture

The specific flavour profile of the Covilhã version is not described in the open sources reviewed.

Variations

‘Cavaca’ names a highly diverse Portuguese family. Versions from Resende, Caldas da Rainha, Pinhel, Viseu, Arouca and other places have their own forms and techniques and are not interchangeable with this entry.

Where to try it

In Covilhã, seeking out Padaria Dias; confirm current production and availability directly before visiting.

Pairs well with

Coffee or tea; no Covilhã-specific traditional pairing was found.

History

The national Seven Wonders of Portuguese Sweets list published on 7 May 2019 includes ‘Cavacas’ among Castelo Branco district's seven candidates and identifies Covilhã as the municipality of origin. Rádio Clube da Covilhã confirmed that Padaria Dias entered the candidate and that it advanced, alongside Padaria Ramalha's Fidalgo de Cherovia, to the group of 140 sweets put to a public vote.

The official Centro de Portugal tourism portal continues to name Cavacas and Fidalgo de Cherovia among Covilhã's sweets. These sources establish the contemporary territorial and commercial association, but they do not establish a creation date, convent provenance or historical recipe; those elements remain unknown.
