Cavacas Altas de Coimbra are large hollow cakes with tall, irregular walls and a white sugar coating. Descriptive sources associate the batter with eggs, sugar and flour and describe it as dry; the coating sweetens and moistens the surface.

Their height and empty centre distinguish this Coimbra speciality from low cavacas, glazed slices and other regional pastries sharing the name. The silhouette may resemble a crown or open vessel, but the cavity does not imply a filling: the sources consulted present the cavaca plain.

No certified product specification for the recipe was located. One published preparation uses whole eggs, yolks, whipped whites, sugar and flour, baking the mixture in a tray over a bed of flour; olive oil, aguardente and individual moulds found in other regional cavaca recipes should therefore not be presented as canonical here.

Coimbra City Council includes cavacas altas in its survey of the city's older confectionery, after framing Coimbra's food heritage through its many convents and monasteries. The national inventory of traditional products names Cavacas Altas de Coimbra, while QUALIFICA's criteria include them among Portuguese convent-confectionery products.

These sources support the Coimbra identity and convent classification, but they do not assign the sweet to a named convent or date its creation. Nor was primary documentation found for the modern legend about preserving a wedding cake during an epidemic; that story is therefore not presented here as established history.
