Capuchinhos de Ponte da Barca are small puff-pastry bundles made from a square whose four corners are folded over one another by hand. The fold leaves a succession of flaps and seams on top, distinguishing the sweet from a fully sealed pillow. Its shell is pale, dry and brittle; inside is a compact, moist ochre-gold filling of eggs, regional honey and chestnut.
This combination of pastry technique and local produce was presented as an innovation sweet, not as an old convent recipe. The photograph published during its Seven Wonders of Portuguese Sweets candidature confirms both the angular form and the dense cut filling.

The reference version is the Almar/former Pastelaria Caracas creation; sweets of the same name from Leiria belong to a different tradition and should not be conflated with these.

The Capuchinho is a creation by pastry chef Mário Saraiva, associated with the former Pastelaria Caracas, now Almar, in Ponte da Barca. Its name honours Frei Agostinho da Cruz, an Arrábida friar and poet born in the town in 1540 who died in 1619. The sweet appeared publicly amid the town's initiatives marking the fourth centenary of the poet's death: in April 2019 it was one of 420 national candidates for the Seven Wonders of Portuguese Sweets, entered in the Innovation Sweets category. Its producer continues to present it as an exclusive local signature.
