Brisas da Figueira are small pastry-lined tarts filled with whole eggs, ground almonds, sugar syrup cooked to pearl stage and a glass of port. They bake at low temperature for about 45 minutes, developing a fluted yellow rim and a moist orange-gold centre speckled with almond.
The proportions are opulent—twelve eggs and 300 grams of almonds per batch—but the individual form keeps the sweet delicate and suited to a pastry-shop display.
