Viana do Alentejo's Bolo Real concentrates the foundations of convent confectionery: yolks, sugar, almonds and gila preserve. A thick almond-syrup and yolk mixture rests overnight; half enters the mould, receives a fine layer of gila and is covered with the remaining batter.

Once baked and cool, the cake is finished with fondant, another layer of gila and a decorative crown of sugar pearls and egg threads. Dense, golden-yellow and ceremonial, it is especially associated with festive seasons.

History

The DGADR record refers to sources placing Bolo Real, Enxovalhada and Bolo Conde de Alcáçovas within Viana do Alentejo's confectionery identity as early as the fifteenth century, and connects local confectionery with the Convent of Jesus, which received yolks left from wine clarification. An account based on the book Tradição by the Terras Dentro association preserves a different memory: a popular Alcáçovas recipe transmitted orally and recovered by Maria Carolina Matado, with no royal origin. The sources agree on its association with Alcáçovas and Viana do Alentejo but do not establish one uncontested convent provenance.
