Bolo Conde de Alcáçovas begins with a small moist cake of ground almonds, gila squash preserve, sugar, eggs and yolks. Above it rises a generous spooned-on meringue, forming a tall irregular mound whose peaks turn golden in the oven.
As it rests, syrup released by the meringue seeps into the cake and deepens its moist crumb.
