Bolo Bom Como Tão Bom is a showpiece of Beja confectionery. The round cake, about 15 centimetres across, combines sugar, gila preserve, abundant eggs, flour and orange zest. Once cool, it receives a white coating of sugar syrup cooked to thread stage.
Its signature is the finish: petals and leaves cut from crystallised pumpkin, traditionally coloured, form flowers across the surface. As laborious as it is festive, the cake is reserved for weddings, birthdays and special tables.
- sugar
- gila preserve
- eggs
- flour
- orange zest
- crystallised pumpkin
Very sweet and yolk-rich, with soft strands of gila, orange fragrance and a sugary coating.
Also known simply as Bom Como Tão Bom; flower colours, number and design vary with the occasion.
At traditional Beja confectioners and by special order for celebrations.
Espresso or unsweetened black tea.
The DGADR record attributes the sweet to Beja's Convent of Nossa Senhora da Esperança, established for the Discalced Carmelites in 1541. Its elaborate flavour and decoration reflect the role of Alentejo convents in receiving important entourages and producing confectionery designed to impress. Its specific name is corroborated by a national list of traditional products; more recently, Cascais FoodLab included the cake in a technical workshop on traditional Portuguese confectionery. These sources confirm contemporary recognition but add no independent proof of the convent-origin claim.
