Bolinhos de Maçã de Armamar are small rustic spheres shaped by hand and rolled in flour before entering a very hot oven. In about fifteen minutes their surface opens into pale plates and golden fissures, while the interior remains compact and moist thanks to diced apple.

The dough is unusually rich: besides flour, butter, sugar and eggs it contains ground walnut, coconut, cinnamon and aniseed. The fruit is not a separate filling; it is folded in last and distributes small juicy points through the crumb. The result sits between a festive dry cake and a sweet broa, with a deliberately irregular appearance.

History

Armamar promotes itself as the Capital of the Mountain Apple, with orchards on the municipality's higher ground. The official 2022 Fins de Semana Gastronómicos guide published the complete cake recipe as its representative dessert and highlighted apple—fresh or used in sweets—as a defining local product. The Municipality continues to present the cakes at tourism events, paired with Távora-Varosa sparkling wine.
