Biscoitos de Azeite de Soure are simple yeast-raised biscuits made with wheat flour, water, low-acidity olive oil, baker's yeast and salt. The dough is worked until elastic, divided into small balls, stretched by hand and closed into the traditional figure-eight shape before baking in a medium oven.

They are neither sweet cookies nor Nelas's Biscoito Mondegão, which contains eggs, sugar and lemon. The documented Soure version belongs to the regional family of pale olive-oil rusks and is especially close to Biscoitos do Louriçal from neighbouring Pombal municipality; we preserve the two geographies as related traditions rather than automatically interchangeable names.

Taste & texture

Barely sweet to savoury, with clean wheat and mild olive-oil flavour, a pale crust and the firm texture of a dry bread.

Variations

Size and the openness of the figure eight vary with the maker. Biscoitos do Louriçal are the closest documented relative; Biscoito Mondegão is instead a substantial sweet preparation with a different composition and shape.

History

Soure Municipality repeatedly presents olive-oil biscuits, alongside Soure pão de ló and suspiros, as characteristic sweets of the municipality. Its strategic plan identifies them as a leading element of local gastronomy, and its 2026 tourism promotion again included them among the local products taken to the BTL travel fair.

The formula published in the 2025 Cookbook and Good Nutrition Guide to the Coimbra Region appears with a photograph credited to Soure Municipality. That attribution documents a concrete local version, but it neither proves exclusive origin nor justifies erasing similar variants across Terras de Sicó and the Lower Mondego.
