Amêndoas de Portalegre are whole almonds enclosed by hand in successive layers of crystallised sugar. The white or cream coating becomes thick, matte and slightly irregular, retaining a firm toasted almond at its centre.
The traditional sugar formula uses only almonds, sugar and water. Cocoa is added for the chocolate version, producing a brown coating without artificial colourings or additives. Making them requires patience so the sugar adheres and grows evenly around each nut.

A dry sweet shell that cracks before the toasted almond; the cocoa version is more bitter and aromatic.
The white version contains almond, sugar and water. The brown version adds cocoa. Coating thickness and irregularity reveal the handmade process.
In Portalegre during Lent and Easter, at traditional shops, markets and confectionery fairs. Production is short and seasonal.

Portalegre City Council includes these almonds among the city's popular-origin sweets and emphasises their artisanal production. A locally documented producing family preserves a recipe more than a century old, transmitted across generations.
Production follows the Easter calendar: traditionally it starts in the week after Carnival and ends on Good Friday. ‘Amêndoas de Portalegre’ appears in QUALIFICA's national inventory of traditional products.
