Bolinhos de Trás-da-Matriz — Modern Nutella Adaptation
This is the only detailed public formula located for Bolinhos de Trás-da-Matriz: a contemporary promotional adaptation published by Nutella. The batter combines eggs, milk, olive oil, sugar, orange, flour and raising agent and makes 30 cakes; the hazelnut spread is added only after baking. The recipe is useful and fully attributed, but it should not be mistaken for Vilar's historical formula, which remains unpublished.

Ingredients
- 6 Eggs
- 200 ml / 6.8 fl oz Milk
- 200 ml / 6.8 fl oz Olive oil
- 2 coffee spoons Baking powder
- 250 g / 8.8 oz Sugar
- zest of 1/2 Orange
- 1 kg / 2 lb 3 oz Wheat flour
- 15 g / 0.5 oz per cake (450 g / 15.9 oz total) Nutella
- 30 Individual paper cases
Method
Heat the oven to 190°C / 375°F and arrange 30 paper cases on one or more trays.
Beat the six eggs with the 250 g / 8.8 oz sugar.
Add the 200 ml / 6.8 fl oz milk, the zest of half an orange and the 200 ml / 6.8 fl oz olive oil, mixing between additions.
Combine the flour and baking powder, then incorporate them into the batter in three additions.
Fill each case three-quarters full.
Bake at 190°C / 375°F for 15 minutes.
Once baked, finish each cake with 15 g / 0.5 oz Nutella.
