Sopa Seca is not a liquid soup but a layered bread dessert baked in an earthenware bowl. Thick slices of day-old bread alternate with brown sugar and abundant cinnamon, absorb a syrup of water, lemon and Port and bake until the top becomes dark and rough.
The toasted exterior contrasts with a soft soaked interior. It should reach the table warm, ideally from the same wood-fired oven used for roast lamb.
