Rochedos de Alfândega da Fé are tall asymmetric clusters of almonds, egg whites and sugar. Almond flakes and pieces project from the surface, creating fissures, peaks and broken faces; baking sets the pale exterior with toasted spots while the centre retains some softness.

Their appearance is no accident but the reason for the name. Each piece suggests a small rock formation and no two are exactly alike. The recipe uses the whites left by the almond-and-yolk Barquinhos, making the two sweets an inseparable pair in Alfândega da Fé confectionery.

Municipal tradition locates the roots of Rochedos in Parada and Vilar Chão and describes knowledge transmitted through generations of women confectioners. They were customary at summer festivities, family gatherings, weddings and baptisms, and remain among the products chosen by the municipality to represent the area.
