Régua’s Régulas are individual long, narrow puff pastries served in elongated paper cups. Golden laminated sides frame a centre of ovos-moles, hazelnut and Port; a slim strip of pastry runs along the length and the whole is generously dusted with icing sugar.

Contrast defines the sweet: the pastry breaks into dry crisp flakes while the centre stays thick, moist and yolk-rich, punctuated by toasted hazelnut. Cinnamon may reinforce the aroma but is optional in the documented formulation.

Ingredients
  • Puff pastry
  • Ovos-moles egg-yolk cream
  • Hazelnut
  • Port
  • Icing sugar
  • Cinnamon (optional)
Taste & texture

Light brittle puff pastry, rich ovos-moles, toasted hazelnut and a warm undertone of Port.

Variations

Cinnamon is optional. Icing-sugar quantity, central-channel width and filling visibility vary, but the long form and four principal elements preserve the identity.

Where to try it

At Doces do Céu and other local-sweets outlets in Peso da Régua. Confirm availability before making a dedicated visit.

Pairs well with

Espresso, black tea or a glass of white Port.

History

Régulas were created to mark twenty years since Peso da Régua became a city in 1985, placing their launch in 2005. Their name revives one historical explanation for the place-name Régua, connecting it with the Roman expression “Vila Régula”.

A Douro Alliance guide documented the name’s rationale and the four essential elements—ovos-moles, hazelnut, puff pastry and Port. Recent photographs from Doces do Céu show that the pastry remains in local production in its long, sugar-dusted form. The consulted sources do not identify an individual creator, so authorship should not be assigned without further evidence.
