Queijadas de Serpa are small curd-cheese tarts with an extremely thin pastry shell shaped in fluted traditional tin moulds. Their soft yellow filling uses traditional requeijão, eggs, sugar, lard and as little flour as possible; baking toasts the rim and creates amber patches on the surface.
The outer pastry should remain restrained: it supports the curd rather than dominating the tart. When cut, the interior is compact and creamy, closer to baked sweet curd than milk custard.

Each maker keeps its own proportions; the most traditional versions favour requeijão, unpasteurised eggs, lard and little flour.

Their precise origin is diffuse. Local memory recalls household production, door-to-door sales and transmission through confectioners such as Clotilde, who ran a guesthouse in Serpa. Because they required abundant curd cheese and eggs, they were chiefly sweets of wealthier homes, unlike popular cakes made from leftover bread.
Casa Paixão has maintained a commercial family line since 1977 and links its growth to the requeijão queijadas of the 1970s. This documents modern production without erasing an earlier, more dispersed local tradition. In 2019, Queijadas de Serpa represented the municipality in the Seven Wonders of Portuguese Sweets.
