Pudim de Laranja de Amares is presented as a compact ring, commonly moulded with vertical scallops and covered in dark caramel sauce. Its colour ranges from deep orange to amber, while the interior is smooth, fine and dense rather than pale like a milk-based flan.
The published regional recipe is unusually direct: eight whole eggs, 400 grams of sugar and one teacup of Amares orange juice. It is cooked in a bain-marie inside a pre-caramelised mould. The local citrus is not merely flavouring; it is the batter's only liquid and the ingredient that defines taste, colour and identity.

Very sweet, intensely citrusy and egg-rich, with a gentle bitterness from dark caramel.
Decoration may include candied orange peel or strips. Caramel stage and cooking time change the colour and firmness, but the municipal formula contains neither milk nor flour.

Amares promotes the pudding as a defining dessert through Porto and Northern Portugal's Gastronomic Weekends. The 2026 edition again placed it on the municipal menu alongside papas de sarrabulho and cod fritters, with the stated aim of preserving local culinary heritage. The speciality reflects the municipality's long connection with thin-skinned oranges used throughout its cooking and confectionery.
