Mirandela's olive-oil pudding is a baked egg custard, set in a water bath, lined with caramel and enriched — in place of butter or cream — with the region's prized extra-virgin olive oil. Where other corners of Portugal would reach for dairy fat, Mirandela turns to what it has in greatest abundance and finest quality: the oil of its centuries-old groves.
To look at, it is a serene thing — a trembling amber dome crowned with a veil of dark caramel that slides down its sides as it is turned out. In the mouth it surprises: the firm sweetness of egg and sugar is cut through by a fruity, faintly green undertone from the oil, perfumed with lemon zest and cinnamon.
