Pudim Condessa Aldara is presented as a low, fluted ring mould coated in dark amber caramel. Its interior is compact and smooth; caramel adds sheen, gentle bitterness and sauce to each slice.
The winning formula highlights local flavours through yolks, honey, cinnamon and Singeverga liqueur. An official 2022 regional guide publishes quantities and method, including about one hour in a bain-marie, but gives no temperature, yield or caramel quantity.

Santo Tirso Municipality launched a competition to create a new representative dessert. From 28 blind-tasted proposals, Confeitaria Algarve, represented in the 2018 sources by António da Silva Miranda, won on 6 March 2018. A 2026 publication credits employee Laurinda Gonçalves with developing the formula. Its name honours Countess Aldara, mother of Saint Rosendo and benefactor of São Bento Monastery.
