Pudim Conde da Praia is not a caramel flan. It is a low, compact round sweet with dark-brown baked edges and a moist yellow-orange interior. Once cold, it is unmoulded whole and generously covered with powdered sugar; a slice reveals a dense, almost creamy body in which potato binds a remarkable quantity of egg yolk, butter and sugar syrup.

The published formula uses local potatoes, 24 yolks and one white, Azorean butter, sugar, cinnamon and lemon. Boiled potato is worked into syrup at pearl stage, the mixture returns to the heat until it parts along the pan, and only then are the eggs incorporated before baking. That laborious method helps explain its reputation as a difficult recipe held by very few hands.

The whole powdered pudding is the historical reference; Azores Tourism also records a modern queijada presentation known as Conde da Praia.

History

Terceira tradition links the former Pudim de Batata da Terra to the nuns of São Gonçalo Convent in Angra do Heroísmo at the end of the eighteenth century. Its present name remembers Teotónio de Ornelas Bruges Paim da Câmara (1807–1870), first Count of Praia da Vitória, a Liberal politician and collector of culinary recipes who was said to be especially fond of the sweet. University of the Azores research notes the recipe among the manuscripts kept at his residence, Santa Luzia Palace. Recovered by local confectioners and now recognised by the Marca Açores label, the pudding was one of the seven Azorean finalists in the 2019 Seven Wonders of Portuguese Sweets.
