The Portimonense is a small, low, round individual pastry. A golden pastry case holds a glossy caramel-brown filling covered with plentiful irregular slices of toasted almond. Its narrow rim leaves the entire top exposed.
The maker's published presentation shows compact coffee-sized pastries contrasting a firm case, moist filling and crisp almonds. The full formula has not been published and the speciality should not be collapsed into a generic almond tart.
- sliced almonds
- tartlet pastry
- caramelised filling from an unpublished commercial formula
Toasted almond and caramel dominate, with a crisp top over moist filling and a golden pastry case.
The reference version is Delícias de Portimão's reconstruction. The maker describes the original 1990s pastry-shop recipe as lost.
