Almofadinhas de Batata-Doce de Aljezur are distinguished first by their shape: long, low rectangular pastries resembling narrow little pillows. The identified photograph from the 2019 nomination shows very thin pastry folded into irregular leaves, baked until its edges turn deep golden brown and finished with a light veil of sugar.

Inside is sweet-potato preserve, the ingredient that defines Aljezur's cooking. The PGI-protected Lira variety has yellow flesh, natural sweetness and a notably low-fibre texture. History

Sweet-potato cultivation has deep roots in the Aljezur territory and is now protected by a Geographical Indication. The root became the basis of an entire family of local sweets—cakes, rolls, pastries and fritters—made by the municipality's confectioners and celebrated at fairs and food festivals.

In 2019 Almofadinhas de Batata-Doce de Aljezur passed the first stage of the Seven Wonders of Portuguese Sweets in the Pastry Cake category. It was entered separately from Aljezur Sweet-Potato Pastéis, Fritos de Aljezur and the Frescura sweet roll, confirming that local makers treated the pillow as its own creation rather than another name for an azevia.
