Pastel Brigantino is an individual sweet created to represent Bragança through ingredients from Trás-os-Montes. A puff-pastry base holds a moist filling between cake and cream, made with chestnut, almond and wheat flours, honey, sugar, olive oil, butter and eggs. Fine icing lines and half a chestnut finish the golden top.

Chestnut flour provides body and an earthy flavour; almond flour retains moisture, organic honey from Montesinho Natural Park ties it to the territory and olive oil replaces part of the usual fat. The producer declares water, sugar, honey, almond flour, butter, chestnut flour, olive oil, wheat flour and eggs without publishing proportions.

Variations

Several shops share the municipal recipe, but execution and decoration may vary. Half a chestnut and thin icing lines are the most consistent visual markers. It should not be confused with a chestnut custard tart or a generic Pastel de Castanha, both structurally different.

Pastelaria D. Dinis in Bragança created the winning recipe. Other city bakeries and regional retailers also sell it; confirm decoration and availability directly, especially if you want the creator's version.

History

Bragança Municipal Council challenged the city's pastry shops in 2018 to create its first local signature sweet. Ten businesses entered thirteen recipes; a blind tasting selected the Pastelaria D. Dinis proposal. The name ‘Pastel Brigantino’ was subsequently chosen, registered with Portugal's industrial-property institute and publicly launched on 14 February 2022.

This chronology explains why the name already appears among the 420 nominees for the 2019 Seven Wonders of Portuguese Sweets, in the Innovative Sweets category, although the public launch of the brand and finished product came later. The council shared the recipe with other participating bakeries so the sweet could become a common city reference.
