The classic Palmier Recheado is a low rectangular cake: two equal parallel pieces of caramelised puff pastry are “married” with a band of egg cream. Pastry ridges remain visible on top, while the side shows crisp layers around the moist filling.

Heart-shaped versions also exist today, but technical documentation identifies the rectangle as the original form. It is not merely a plain palmier cut open: the parallel arrangement of two slabs and the cream make it a counter pastry in its own right.

Variations

It may be rectangular or heart-shaped, filled with egg cream, quince paste or chocolate, and partly coated. Central Portugal also calls it Riscadinho; Jangada is another popular name.

Where to try it

It remains available in in-house pastry shops. Meia-Lua and Sacolinha retain Palmier Recheado in their catalogues, while current menus specify sweet egg-cream filling.

Pairs well with

Unsweetened espresso or a galão.

History

Fabrico Próprio describes it as an older variant than Palmier Simples and records the name Riscadinho in central Portugal. The original form was rectangular, although transmission among pastry shops created other geometries.

The filling also changed: it originally used quince paste, whereas egg cream is now the most common reference. Chocolate-filled or partly chocolate-coated examples also occur. Its relative age is documented, but there is no secure inventor or date.
