Moliceiros de Ovos combine a crisp biscuit moulded like the emblematic boat of the Aveiro Lagoon with a generous ovos-moles filling. The outer shell acts as a tiny vessel with raised bow and stern, leaving the yolk-and-sugar cream visible in its centre.

Unlike Ovos Moles de Aveiro enclosed in wafer, the contrast here comes from baked biscuit: dry and brittle at the edges, creamy and intense inside. The shape turns a symbol of the lagoon landscape into an individual pastry.

History

An Aveiro producer's technical directory defines the product as a ‘boat-shaped biscuit filled with ovos moles’ and explains that its name honours the city's moliceiro boats. Other regional producers maintain the same combination of yolk, sugar and biscuit.

Its filling belongs to the long Ovos Moles de Aveiro tradition, whose specificity and production area are protected by a Geographical Indication. The name ‘Moliceiros de Ovos’ also appears in QUALIFICA's national bakery and pastry inventory.
