Melindres de Castelo de Paiva are small, low cakes, somewhere between round and oval, with a rough surface that their sugar coating does not entirely conceal. The glaze dries white and matte over the ridges, revealing patches of golden batter and making every piece visually different.
An egg-and-flour batter is baked before receiving sugar syrup. The result is dry and light, suited to keeping and travelling to festivals and pilgrimages. Although their name is shared by sweets elsewhere in Portugal, these belong to Serradelo's historic assortment and have their own identity within Paiva confectionery.

Sweet and delicately egg-flavoured, with a dry light interior and a thin sugar shell that dissolves in the mouth.
Shape and coating thickness vary in handmade production. They should not be confused with Melindres de Arouca, which are documented separately and belong to another local tradition.

ADRIMAG traces the reputation of Serradelo's sweets to the late nineteenth century. Around 1900, Maria da Conceição Almeida was recognised as a local sweet maker; Ana Vieira Moreira learned from her to work the batters for pão-de-ló, melindres and cavacas. Production later passed to Ana's family and remained associated with Easter, Raiva's religious festivals and Castelo de Paiva's Vinho Verde fair.
