Folar de Valpaços IGP is a tall rectangular wheat bread with a thin crust, enriched with eggs, Trás-os-Montes olive oil, margarine and/or lard. Its yellow, fluffy crumb holds irregular pieces of pork belly and fatty pork, linguiça, salpicão and presunto.
Its cut face is the signature: alveolated crumb forms a mosaic of yellow, paprika red, cured-meat pink and pale streaks of fat. The product specification permits pieces weighing 500 g to 2 kg, measuring 15–40 cm long, 10–25 cm wide and 8–12 cm high.
The protected name requires production within the municipality of Valpaços and a distinctive method with two fermentations. A meat folar baked elsewhere may belong to the same Easter family but cannot be sold as Folar de Valpaços IGP without meeting the specification and control requirements.

The specification permits defined combinations of fat and optional meats while fixing shape, dimensions, essential raw materials, area and method. Uncertified family folares may include other meats.
From certified producers in the municipality of Valpaços and at the Folar Fair before Easter. Look for the full name and IGP mark.

Folar was traditionally prepared at Easter as a gift and associated with the Compasso or parish Easter visit. According to the official DGADR entry and European single document, the first printed recipe using the name Folar de Valpaços appeared in Bertha Rosa Limpo's Livro de Pantagruel in 1959; Maria de Lourdes Modesto recorded it again in Cozinha Tradicional Portuguesa in 1982.
The name was registered as a Protected Geographical Indication in 2017. Its reputation rests on local know-how, dough rich in olive oil and eggs, two proving stages and cured or smoked pork. The delimited area is the entire municipality of Valpaços.
Although demand peaks at Easter and during the Folar Fair, certified producers now work throughout the year. The IGP mark remains the way to distinguish controlled product from versions merely inspired by it.
