Foguetes de Amarante are small cylinders made by rolling a host wafer around a paste of egg yolks, grated almonds and sugar syrup. The tube retains a visibly open end that reveals its orange interior, while baking gives the wafer a fine, firm structure.
After baking, the foguetes are dipped in syrup that may include lemon peel or cinnamon and receive a fondant-like sugar finish. They dry on racks until a white, translucent, irregular crisp glaze forms—the contrast that distinguishes them from the papo de anjo made with the same base.
