Estrelas de Tomar confectionery defines this speciality succinctly as ‘queijadas with an almond centre’. The maker's published photograph shows a round queijada, not a star: a thin, pale, pleated shell holds a low, slightly domed and well-browned top. A 2016 Visão report confirms the description as an almond queijada and records sales individually or in boxes of six.
The sources do not publish the complete recipe. In particular, they do not support adding egg cream, fios de ovos, butter, lemon or cheese to the ingredient list. Here ‘queijada’ identifies the producer's type of small cake; the word alone does not prove that the formula contains cheese.
- Almonds
An almond queijada with a well-browned surface; the sources publish no detailed sensory description.
No documented variants were found. The maker distinguishes this queijada from Queijinhos Doces, which it separately describes as almond paste filled with egg sweet.
The maker currently presents the speciality on its website and lists Rua Serpa Pinto 12, Tomar. Visão documented individual and six-piece box sales in 2016; confirm opening hours, formats and availability directly before making a dedicated trip.
Not documented in the sources reviewed.
The available institutional history principally concerns the maker. Its website says Henrique Neves began working at a homemade-cake factory in 1949, trained in pastry in 1956 and returned in 1960 to form a partnership with his former employers. Tomar municipality also dates the emergence of the Estrelas de Tomar confectionery to 1960 and attributes it to Henrique Neves's creativity.
In 2016, Visão described the establishment as the city's oldest pastry shop with its own production and called Estrelas de Tomar one of its exclusive old-recipe products. None of the reviewed sources, however, dates the creation of this particular queijada, identifies the formula's author or presents a trademark registration. The shop's 1960 opening must not automatically be turned into the product's invention date.
