Doces de Amêndoa de Mós do Douro are small irregular, pale and crisp cakes made solely from egg whites, sugar and high-quality almonds. The blanched nuts are hand-sliced as thin as orange blossom petals, remaining visible and lightly toasted across the surface.
Egg whites are whipped until stiff and sugar is added to a stage known by the village's confectioners. The almond slivers are folded in, spooned into small mounds on a floured tray and baked. The formula's simplicity makes slicing, drying and baking control decisive.

Mós do Douro supplied regional almond markets more than 250 years ago, and tradition credits the village's women with creating these sweets. Harvesting, shelling, blanching, drying and slicing were communal and domestic tasks. Offering the cakes remains a sign of deep gratitude or recognition.
