Doce Branco de Romaria is a small, flattened round cake made with eggs, yolks, sugar, flour and lemon. After baking, its top receives a fluid glaze of egg white, sugar and lemon juice. Before it dries, fingertips draw circles or stripes through the glaze, exposing bands of golden cake.
The result combines a light sponge crumb with a thin, brittle white topping.
