Doce Aguiar is a small, low individual tart built in a clearly laminated puff-pastry shell. Chestnut filling reaches the rim and forms a dense, slightly wrinkled brown surface finished with icing sugar.
Cut open, the pastry reveals thin crisp layers surrounding a compact, moist chestnut centre. It should not be confused with the savoury Pastel de Aguiar: that companion product was designed around local mushrooms, while Doce Aguiar was created to showcase chestnuts.

Sweet and earthy, with soft chestnut filling, crisp flaky pastry and a light sugar finish.
Several local bakeries were certified to make and sell the sweet, so chestnut intensity, surface pattern and final sugar finish can vary. Its shared identity is always the sweet chestnut version, separate from the savoury mushroom pastry.

Vila Pouca de Aguiar Municipality launched the two regional pastries in February 2015, working with the community and six participating bakeries. The initiative sought to create edible symbols for the municipality and add value to two products important to the local economy: chestnuts and mushrooms. A public vote selected Doce Aguiar for the chestnut sweet and Pastel de Aguiar for the savoury version.
