Cavacas de Santa Maria are round, hollow, crisp cakes coated with sugar syrup that dries into a white shell. The Azores tourism portal describes them as an egg-and-sugar sweet, while a 2025 workshop promoted by the Santa Maria Museum confirms their ball shape, hollow centre and syrup coating.

One published regional recipe combines eggs, flour, olive oil and water for the batter, with sugar and water for the syrup. The batter is placed in small greased moulds, expands in the oven and leaves a cavity inside. Proportions and the fat used to prepare the moulds may vary between producers; this page separates those details from the consistently documented identity.

The Azores tourism portal presents cavacas as part of Santa Maria's food heritage, and VisitPortugal names cavacas de Santa Maria among the archipelago's sweets. In October 2025, the Santa Maria Museum invited two practitioners to teach their preparation in a workshop titled Sabor e Arte — Cavacas de Santa Maria, evidence of contemporary local transmission.

Portugal's 2012 national list of traditional products contains the wording Cavacos dos Açores. Other lists repeat cavacos among São Jorge sweets but provide no description, recipe or image establishing a separate product. In light of more precise and current regional evidence, this page uses the documented name Cavacas de Santa Maria and retains Cavacos dos Açores only as an inventory spelling and legacy address.
