Valongo's Bolo de Biscoito uses one of the municipality's emblematic products in a chilled layered dessert. Traditional local biscuits are briefly dipped in strong coffee and alternated with a whipped cream of butter, icing sugar, egg yolks and coffee.
The assembly produces a compact cake with visible strata and a contrast between softened biscuit and rich cream. Ground biscuit covers the surface before chilling, reinforcing the toasted flavour of Valongo baking.
