Biscoito Trilobite de Valongo is a small, dry, elongated biscuit created to reproduce in simplified form the fossils that define the municipality's geology. It has an oval body tapered at both ends and a succession of transverse ribs pressed by a purpose-built mould. Its colour is pale golden with a faint cocoa-brown cast, and its texture is firm and crisp.

The recipe combines local ingredients from Valongo's biscuit tradition with cocoa and ginger. It should not be confused with other trilobite-shaped cookies made in Portuguese geoparks: this version was born in Valongo from the meeting of its biscuit industry and the fossil heritage of the Valongo Anticline.

Variations

Its identity depends on the exclusive ribbed oval mould. The complete formula and proportions of the school version have not been published; municipal sources confirm only local ingredients, cocoa and ginger.

It appears chiefly at presentations, show cookings and educational events connected with the municipality, Valongo Secondary School and the town's biscuit heritage. It is not documented as a permanent everyday retail product, so local programming should be checked.

History

Valongo Secondary School presented the biscuit on 21 April 2017 during the opening of the municipal exhibition 'Trilobites in Valongo, A Trace of History'. To achieve the intended morphology, local company A Metalúrgica Bakeware developed a dedicated mould—a technically demanding job because the ribs and outline had to be stamped and released cleanly.

In 2019 the municipality promoted Biscoito Trilobite as an entry in Portugal's Seven Wonders of Sweets, under Innovation Sweets. Valongo described the creation as an evocation of trilobites some 542 million years old, joining local raw materials with cocoa and ginger. Its continuity was not confined to the competition: the Expoval 2025 programme again included a Biscoito Trilobite showcooking.
