Beja Requeijão Queijadas — Home Formula Published by Iguaria
This is the complete home formula published by Iguaria in 2019: twelve queijadas with a thin flour, egg, butter and lard case and a filling of sheep's-milk requeijão, eggs, sugar, butter, flour and cinnamon. Its composition and technique match the Alentejo family described by DGADR. A larger regional formula published in 1994 by Serpa Municipality and the Beja School of Education, and reproduced by the Minha Terra Federation, corroborates the filling but omits the pastry liquid; the two versions are therefore not silently combined.

Ingredients
- 50 ml / 1.7 fl oz Warm water for the pastry
- 15 g / 0.5 oz Lard for the pastry
- 15 g / 0.5 oz Butter for the pastry
- 1 Egg for the pastry
- 130 g / 4.6 oz Plain wheat flour for the pastry
- 1 generous pinch Salt
- 400 g / 14.1 oz Sheep's-milk requeijão
- 3 Eggs for the filling
- 2 Egg yolks for the filling
- 200 g / 7.1 oz Sugar
- 30 g / 1.1 oz Butter for the filling
- 30 g / 1.1 oz Wheat flour for the filling
- 1 level tsp Ground cinnamon
Method
For the pastry, combine the warm water, salt, 15 g lard and 15 g butter in a bowl. Let the fats melt in the water and allow the mixture to cool before adding the egg.
Add one egg and 130 g plain flour. Mix into a dough, knead briefly and set aside. The source gives no resting time.
For the filling, place the sheep's-milk requeijão, three eggs, two yolks, sugar, 30 g butter, 30 g flour and cinnamon in a bowl.
Blend the filling with a hand blender until thick and smooth.
Roll the pastry very thinly, cut rounds with a drinking glass and line twelve buttered muffin tins. The source does not separately quantify the butter used for greasing.
Heat the oven to 180°C / 350°F.
Divide the filling among the lined tins and bake for 15–20 minutes, until the queijadas are well browned.
Remove from the oven and leave to cool before unmoulding. The source gives no duration for cooling.
