Method
Beat the eggs and sugar until thoroughly combined.
Gradually fold in the flour and lemon zest.
Grease a tray, line it with paper, grease again and dust with flour.
Pour the light batter into the tray and bake in a moderate oven for about 40 minutes.
After 20 minutes, cover the surface with foil to prevent excessive browning.
Turn out onto a cloth or paper dusted with sugar and cinnamon, then cut into squares or triangles.
