Portuguese Red-Wine Poached Pears

This reproduction follows Teleculinária's published formula: four whole pears, peeled but with their stems retained, gently cooked in red wine scented with sugar, cinnamon, cloves, star anise and orange.

Portuguese Red-Wine Poached Pears, ready to serve

Ingredients

  • 4 Pears
  • 1 litre Red wine
  • 100 g Sugar
  • 4 Cloves
  • 1 Cinnamon stick
  • 1 Star anise
  • peel of 1 orange Orange peel

Method

  1. Place the red wine, sugar, cloves, cinnamon, star anise and orange peel in a pan. Heat until the sugar dissolves.

  2. Peel the pears, retaining their stems. Place them in the pan so that the wine completely covers them.

  3. Cook over low heat for 30 minutes, or until the pears are tender without falling apart. Drain and serve warm or cold.
