Patudos de Alpiarça — Published Municipal Recipe, ready to serve

Ingredients

  • 500 g / 1 lb 1.6 oz Sugar
  • 180 g / 6.3 oz Almonds
  • 60 g / 2.1 oz Chila squash preserve
  • 20 Egg yolks
  • 4 Whole eggs
  • 1 tsp Pectin
  • as needed Butter for greasing
  • as needed Sugar for dusting

Method

  1. Butter a baking tray and heat the oven to a medium temperature.

  2. Heat the sugar with enough water to reach pearl stage.

  3. Add the almonds, pectin and chila preserve.

  4. Beat the whole eggs with the yolks, add them to the mixture, combine well and remove from the heat.

  5. Pour into the tray and bake for 50 minutes in a medium oven.

  6. Cool enough to cut into squares, then dust with sugar.
