Delícias de Frei João — Published Fruit and Walnut Version
This published formula cooks one kilogram of ripe fruit with 700 g sugar and finishes it with chopped walnuts and optional cinnamon. The source divides the fruit into 500 g of peach, grapes, plums, melon and quince in unstated proportions, plus another 500 g of ripe fruit of choice. It is an attributable, reproducible version rather than a sole recipe: another public Alcobaça formula adds eight egg yolks.

Method
Peel the fruit where needed, remove stones and seeds, and cut it into small pieces.
Place all the fruit, sugar and optional cinnamon stick in a wide pan. Cook over low heat, stirring to prevent sticking.
Continue to a track-forming jam stage: drawing the spoon across the bottom of the pan should leave a visible path briefly.
Add the chopped walnuts and boil for 2 minutes.
Remove the cinnamon stick and serve in a dish or bowls after cooling.
