Éclair is an elongated hollow piece of choux pastry filled with pastry cream and topped with a smooth strip of fondant. On Portuguese counters, chocolate, coffee and sugar or vanilla form the classic trio. The coating commonly signals the filling: coffee with coffee, chocolate with chocolate and white with vanilla.

The pastry is light, dry and ridged by the piping bag; cream fills its cavity from end to end. It differs from Portuguese Duchesse, which tends to display chantilly and fios de ovos, and from the curved Rim.

History

Éclair is a French classic that spread internationally and has long been incorporated into Portuguese pastry. Fabrico Próprio documents the formula used in Portugal and the practice of matching cream flavour to fondant. Its research found no secure explanation for the original choice of the French name, meaning “lightning flash”.

Its present-day presence is verifiable: Nutripão lists both Éclair and coffee Éclair with choux, cream and fondant; Puratos Portugal describes pastry-style cream as the country’s most typical filling. Contemporary variety does not erase the classic construction.
