Portuguese Choux is a round cake of light, hollow scalded pastry, split or injected with chantilly. The documented base version has a caramel coating. A highly recognisable variant replaces it with chocolate and finishes with toasted sliced almonds.

The dough is cooked twice: first on the stove to bind water or milk, butter, flour and salt, then in the oven, where steam expands the egg-enriched paste and creates its cavity. That dry shell supports the creamy filling without becoming a sweet bread.

History

Choux pastry has European roots predating its adoption in Portugal, but the simple name Choux acquired a distinct identity on Portuguese counters. Fabrico Próprio records it as more common in the north and separates the cake from its derivatives and formal relatives.

The profiterole is its best-known derivative: it is usually smaller, may contain chantilly or ice cream and receives melted chocolate. Éclair, Duchesse, Rim and other cakes use the same dough but change shape, filling and finish, so they are not synonyms.
