Cavacas do Freixinho are large, rounded and irregular cakes weighing about 250 grams each. Their yellow dough uses tremês or mourisco wheat flour, whole eggs and very fine olive oil; after a long bake with repeated turning, each piece is dipped in sugar syrup.

The white coating dries over folds and ridges while the centre remains light and cavernous. Their size and the almost square outline of some pieces make them very different from small cavacas or the hollow discs of other regions.

History

Tradition credits the cavacas to the religious women and pupils of the Retreat of Our Lady of Mount Carmel in Freixinho, from where they later spread through Carregal, Tabosa, Sernancelhe and Vila da Ponte. Published chronologies do not agree: the DGADR record places the house's activity from the mid-16th century until 1834, whereas Sernancelhe municipality says the Retreat was founded in 1704 and operated until the upheaval of 1910. With no primary documentation identified here, these dates must remain attributed to their respective sources.

For many years the cavacas were given as a distinguished mountain gift to important visitors.
